In the beer industry, quality, safety and taste are paramount

For beer production, it is essential to have sufficient quantities of viable yeast cells from the starter culture and to monitor these cells regularly during the fermentation process. Since numerous flavour and aroma compounds are produced during the fermentation of sugar into alcohol, live yeasts play a decisive role in the development of the typical, individual flavour profile of different types of beer.

In addition to monitoring the yeast cultures, the analysis of the process and cleaning water used also plays an important role for the brewer. This is because after a brewing process, the production and process systems must be rinsed and cleaned with water (cleaning in place). It should be ensured that these procedures are also closely monitored so that no potential harmful germs remain and, above all, the systems can be refilled as quickly as possible.
