You want to prevent the spoilage yeast Brettanomyces bruxellensis from damaging your wine or making it undrinkable.

Brettanomyces bruxellensis is a yeast strain that is considered an undesirable microorganism, a spoilage yeast, in wine production because it produces unpleasant aromas such as “horse sweat,” “medicine cabinet,” or “wet dog” through the formation of volatile phenols. These yeasts are particularly problematic because they can survive under difficult conditions, such as low pH, high alcohol content, and low nutrient availability. They only begin to develop massively once alcoholic fermentation has been completed and the wine yeast has died off. Brettanomyces can form biofilm-like structures on surfaces, hide in wooden barrels or poorly cleaned equipment, be introduced via grapes, and therefore remain undetected until favorable conditions arise for rapid, mass proliferation. The contamination can render entire batches undrinkable and is difficult to control.

In addition to winemakers and wine bottlers, for whom this harmful organism poses a major problem, producers of other fermented beverages such as kombucha and beer are also affected by contamination with Brettanomyces bruxellensis under certain conditions.

Brettanomyces bruxellensis is very problematic in wine production for several reasons:

  • Sensory impairment: This yeast produces volatile phenols such as 4-ethylphenol and 4-ethylguaiacol, which even in small amounts lead to unpleasant odors and flavor notes – such as horse sweat, leather, or stable – which massively devalue the wine sensorially or make it undrinkable.
  • Late activity: Brettanomyces can be present unnoticed in the production process and develop spontaneously. This can even occur after bottling, as it survives under extreme conditions (high alcohol content, low pH, little oxygen), leading to subsequent quality degradation.
  • Difficult detection and removal: The yeast forms biofilms and can hide in wooden barrels or poorly cleaned equipment, making it difficult to eliminate and easy to spread again.
  • Brettanomyces is only moderately sensitive to free sulfur dioxide (SO₂). The organisms are inhibited in their development by appropriate SO₂ concentrations, but not killed. If the SO₂ level drops, they can multiply again.
  • Economic damage: An infestation can render entire batches unsaleable, leading to significant financial losses – especially with high-quality wines with long maturation times. If the spoilage yeasts develop after bottling, the winery's reputation is also damaged.
